Roasted vegetable salad

Method

1.Preheat oven to moderate, 180°C.
2.Mash butter beans in a large bowl. Stir in turkey, brie, onions, parsley, lemon zest and juice; season to taste.
3.Shape mixture into 8 even-sized patties. Dust patties in flour, shaking off excess. Dip into egg and toss in breadcrumbs. Place on a tray; chill 10 minutes.
4.Heat oil in a large frying pan on medium. Cook patties 3-4 minutes, each side, until golden; drain on paper towel.
5.Meanwhile, to make roasted vegetable salad, toss vegetables with oil, balsamic and maple syrup in a baking dish. Bake 10-15 minutes, tossing once. Add spinach, macadamias and tomatoes; toss well.
6.Serve turkey patties with salad.

Patties are also great as finger food topped with a cranberry mayonnaise.
