Prawn, melon and feta cheese salad
1.Gently combine all the salad ingredients in a large bowl.
2.DRESSING: In a jug, whisk together oil, vinegar and mustard. Season to taste.
3.Drizzle dressing over salad just before serving. Toss gently.
You will need about 500g each of honeydew melon and watermelon flesh. If you’re taking this salad to work, pack dressing separately from salad. Keep chilled until serving.
