Method

1.Spray a large frying pan with oil spray and heat on high. Season pork fillet with a little pepper and cook for 2 minutes each side. Reduce heat and cook for another 4 minutes. Cover loosely with foil and rest in a warm place for 3 minutes. Slice thinly.
2.Meanwhile, combine fennel, orange segments, onion and parsley in a bowl. Drizzle with combined olive oil and reserved orange juice. Toss to coat.
3.Serve salad topped with sliced pork.
