1.Heat the chicken stock or water in a medium saucepan and add the chicken breast. Very gently simmer for about 10-15 minutes (depending on the thickness) to poach. Test by piercing meat in the thickest part and the juices should run clear. Remove from the liquid and rest for 10 minutes before slicing thinly on an angle.
2.Arrange the cos, beans, radish, cucumber and onion on a large platter. Top with the chicken and quartered eggs.
3.For the dressing, combine the mayonnaise with the lemon juice. Whisk in feta, seasoning and add a little warm water to thin to a pouring consistency. Drizzle the dressing over the top and sprinkle with chopped nuts.
