1.Place noodles in a large bowl; pour over enough boiling water to cover. Stand 5 minutes; drain, rinse and set aside (noodles should be tender but firm). Repeat with fresh boiling water if necessary.
2.Meanwhile, to make lime dressing, combine dressing ingredients.
3.Toss dressing with noodles, cucumber, carrot and herbs.
4.Heat a large wok or frying pan on high. Stir-fry beef 2-3 mins, until browned. Pile beef over vermicelli salad. Garnish with extra herbs and peanuts; serve.
