Farro is a type of grain with a nutty flavor and adds wonderful texture to this salad of prawns, beetroot and kale finished with a sprinkling of sumac.

Farro, beetroot & kale salad

1.Preheat oven to 180°C.
2.Combine prawns with the oil, garlic and lemon juice. Marinate for 30 minutes.
3.Meanwhile, soak farro in water for 20 minutes. Drain and rinse. Cook farro in boiling water for 15 minutes until tender. Drain and cool.
4.Heat a frying pan on high. Cook prawns for 2 minutes, turning until cooked through.

Dressing

5.In a screw-top jar, combine all the dressing ingredients and shake vigorously to combine.
6.Toss farro and kale with dressing in a large bowl. Add beetroot, prawns and feta. Sprinkle with sumac to serve.
