Method
1.Place couscous in a bowl. Pour boiling water over. Cover with plastic wrap and set aside for 10 minutes. Fluff grains with fork.
2.Mash beans until smooth. Add to couscous with carrot, green onion, egg, breadcrumbs, half the tahini and tabasco. Mix well. Form into 4 flattened patties.
3.Heat oil in a frying pan on medium. Cook patties for 3-4 minutes each side.
4.In a bowl, mix together mayonnaise, lemon juice and remaining tahini.
5.Place lettuce on muffins. Top with a patty and tahini mayonnaise.
Tahini is a sesame seed paste, found in the health food section of supermarkets.
