Serve this dish family style in a big bowl with the nuts, chorizo, tomatoes and rocket gently tossed through ribbons of spaghetti.

Chorizo, tomato & rocket pasta salad

1.In a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain.
2.In a medium frying pan,toast pine nuts on high, stirring continuously until golden. Remove from pan.
3.Thinly slice 1 chorizo. Discard casing from remaining chorizo and finely chop.
4.In same pan, cook sliced and chopped chorizo on high, stirring, until well browned. Drain on a paper towel. Reserve chorizo oil.

Dressing

5.In a small bowl, whisk all the ingredients together. Season to taste.
6.In a large bowl, combine pasta, nuts and chorizo with tomatoes, rocket and dressing, tossing gently.
7.Serve pasta topped with cheese and drizzled with reserved chorizo oil.
