Method
Chicken pita with homemade hummus and sweet red onions
1.To make hummus, place chickpeas, tahini, yoghurt, garlic and lemon juice in a food processor, and blitz until almost smooth. With motor running, slowly drizzle oil down spout until fully incorporated, and mix is fairly smooth. Season with salt and white pepper to taste. Place hummus in a serving bowl and drizzle with oil.
2.In another bowl, add onion, lemon juice and a little salt. Toss to coat and allow to sit, stirring occasionally.
3.Assemble lightly toasted pita breads, place on serving plates and spread each with hummus. Layer with spinach, tomato and chicken.
4.Drain most of the liquid from onion mixture. Top pitas with onion, drizzle of oil and sprinkling of sumac.
Sumac is available from selected supermarkets and delicatessens.
