Method
1.Preheat oven to 180°C. Heat oil and butter together in a large frying pan on medium. Fry schnitzels 2-3 minutes each side, until golden. Drain on absorbent paper.
2.Transfer schnitzels to a shallow ovenproof dish. Sprinkle with mozzarella. Spoon tomato sauce over, scatter with basil and sprinkle with grated parmesan.
3.Bake, uncovered, for 10-15 minutes, until bubbly and golden. Serve with green salad.
