1.In a large bowl, combine mince, breadcrumbs, egg, mustard and thyme.
2.Squeeze excess moisture from apple, carrot and onion. Add to mince mixture; mix well. Season to taste. Roll heaped tablespoonfuls of mixture into 24 small, flattened patties. Arrange on a tray. Chill until required.
3.Heat oil in a large frying pan on medium. Cook patties, in two batches, 3-4 minutes each side, until golden and cooked through. Drain on paper towel.
4.Fill each roll with 3 patties. Top evenly with rocket, avocado and tomato. Serve with crisps and mayonnaise.
Make breadcrumbs using day-old crustless bread. Break into pieces and process in a food processor until fine crumbs are formed. Uncooked patties can be frozen if mince has not been previously frozen and thawed.
