Method

1.To blanch broccoli, cook in a large saucepan of boiling, salted water for 3 minutes, until bright green. Use tongs to remove broccoli from saucepan. Drain, rinse under cold water and drain again. Set aside until needed.
2.To make a white sauce, melt half of butter in a saucepan on medium heat. Add flour and cayenne and cook, stirring, for 1 minute. Whisk in milk and cook for 4 minutes, stirring, until sauce bubbles and thickens. Simmer for 2 minutes.
3.Combine broccoli, white sauce, rice, prosciutto, onion and tasty cheese and season. Spoon into an 8 cup-capacity baking dish.
4.Preheat grill to high. Melt remaining butter in a saucepan on medium, or microwave at 100% for 1 minute. Combine melted butter, parmesan and breadcrumbs. Scatter over rice. Grill for 2-3 minutes, until top is golden. Serve.
