1.Preheat the oven to 180°C. Lightly grease six 1-cup-capacity pudding moulds.
2.Sift the rice flour, caster sugar, baking powder and cocoa into a bowl.
3.Make a well in the centre of the dry ingredients and add the milk, eggs, melted butter and vanilla essence. Beat until smooth and pour the mixture into the pudding moulds.
4.To prepare the topping, combine the brown sugar and cocoa and sprinkle the mixture evenly over the puddings. Gently pour a quarter of a cup boiling water over the back of a spoon onto each pudding.
5.Bake in the preheated oven for 20-25 minutes or until the puddings spring back when lightly pressed in the centre. Serve immediately with whipped cream or ice cream.
