Method

1.Preheat oven to moderate, 180°C. Lightly grease four 1 1/2-cup pudding moulds and line bases with baking paper. Place in a large baking dish. Spoon 2 tablespoons marmalade into each mould. Set aside.
2.Place orange in a food processor. Process until pureed. Add butter, sugar, eggs and vanilla. Pulse until well combined. Add flour, almond meal and coconut, pulsing until combined.
3.Spoon mixture evenly into moulds. Fill pan with enough hot water to come halfway up sides of moulds. Cover the pan with baking paper and a tight-fitting foil lid.
4.Bake for 45-50 minutes until cooked when tested. Remove from dish. Cool slightly before unmoulding. Serve warm with cream or pouring custard.
