Tray-baked chilli and garlic flounder

This delicate fish is quick to cook and is best served with the flavoured butter, crusty bread and peppery rocket.

Method

1.Preheat the oven to 180oC. Line 2 baking trays with baking paper. Melt the butter and mix together with the chilli, garlic, capers, parsley and seasoning.
2.Arrange the flounder on the tray and brush over three quarters of the butter. Lay the lemon slices over the eyes and inside each fish. Bake for 10-12 minutes.
3.To check the fish is done, cut down the back bone and gently prise flesh away from the bone. It should be opaque and starting to flake.
4.Spoon over extra butter just before serving.
