1.Cook spaghetti in a large saucepan of boiling salted water, following packet instructions.
2.Meanwhile, heat oil in a frying pan on medium. Saute prosciutto and garlic 2-3 minutes, until prosciutto is beginning to crisp. Add tomatoes and cook 1-2 minutes, until tender. Stir in spinach and cook 1 minute, until beginning to wilt.
3.Drain pasta and return to pan with prosciutto mixture and parmesan. Season to taste and toss well. Serve with poached egg.
To poach eggs, bring a large saucepan of water with 1 tablespoon of white vinegar to a slow simmer. Crack a room-temperature egg into a small bowl and carefully tip the egg into simmering water. Cook, splashing with hot water, 2-3 minutes. Remove with a slotted spoon.
