1.Preheat oven to 200°C. Line oven with baking paper.
2.In a bowl, combine mince, 2 eggs, onion, breadcrumbs, sauce, parsley and half garlic. Season and mix well.
3.Shape mixture into a 10cm x 18cm log and place on tray. Bake for 15 minutes. Cool.
4.Meanwhile, melt butter in a medium frying pan on medium heat. Sauté mushrooms for 3-4 minutes, until tender. Add remaining garlic and cook for 1 minute.
5.Increase oven to 220°C.
6.Join pastry sheets, making a 1cm seam down one side. Spread mushrooms lengthways along centre of pastry. Place mince log on top. Brush border with some of the extra egg. Roll up to enclose, pressing ends together to seal. Place on tray. Brush with remaining egg.
7.Bake 20-25 minutes until pastry is puffed and golden. Rest for 10 minutes before slicing. Serve with tomato sauce and accompany with mashed potatoes and salad.
