Lamb with coconut vegies
1.Sprinkle both sides of lamb with curry powder; spray with oil. Heat a deep large frying pan over moderate heat. Add lamb; cook for 1-2 minutes each side or until browned. Transfer to a heatproof plate.
2.Spray kumara with oil then add to pan. Cook and stir for 4 minutes. Add zucchini; cook and stir for 3 minutes more.
3.Add beans, garlic, coriander blend and milk. Bring to the boil. Reduce heat. Place lamb in a single layer over vegetables. Simmer, covered, for 5 minutes or until lamb and vegetables are tender.
Coriander herb blend in tubes is in the fresh produce section; use in stir-fries, sauces, pasta and casseroles.
