1.Cook pasta in a large saucepan of boiling, salted water, following packet direction. Drain well. Return to pan.
2.Meanwhile, melt butter in a large frying pan on medium. Cook chicken, 5-6 minutes, until lightly browned. Transfer to a plate
3.Add onion to same pan and sauté, 3-4 minutes, until tender. Add mushrooms and garlic. Continue to cook, 3-4 minutes, stirring occasionally.
4.Pour sherry into pan, stirring to deglaze. Return chicken to pan with cream and bring to the boil. Reduce heat to low and simmer gently, 5-6 minutes, until sauce starts to thicken.
5.Toss chicken mixture through hot pasta with spinach and parmesan. Toss well and season to taste. Serve with extra parmesan, if you like.
