Beef, spinach and pasta bake

An incredibly easy pasta bake that the kids will love.

Method

1.Cook pasta in plenty of boiling, salted water for 10 minutes or according to packet instructions until just tender to the bite. Drain well.
2.At the same time, heat a saucepan, add oil and onion and cook over a medium heat for 5 minutes to soften. Add the beef mince and cook for 5 minutes, breaking up the mince with a wooden spoon as it cooks.
3.Add tomatoes and tomato paste, then simmer for 5 to 10 minutes or until liquid is reduced and sauce thick. Stir in spinach and parsley and season well with salt and pepper to taste.
4.Heat oven to 200C. Combine pasta and beef sauce and pour into a large baking dish. Scatter with cheese and bake for 20 minutes until the cheese is melted and golden brown.
