Method
1.Place chocolate in a small heatproof bowl over a saucepan of simmering water (don’t let base of bowl touch water). Stir constantly until melted and smooth. Remove from heat. Cool slightly. Stir in ricotta until almost smooth.
2.Place sugar in a large heavy-based frying pan over moderate heat. Cook, shaking pan occasionally, for 2-3 minutes or until it starts to caramelise. Stir in brandy, shaking pan to dissolve. Cool slightly.
3.Place strawberries in a large heatproof bowl. Pour brandy mixture over strawberries. Stand for 5 minutes
4.Spoon strawberries and brandy sauce into serving glasses. Top with chocolate mixture. Serve.
To melt chocolate in the microwave, place in a small microwave-safe bowl. Microwave on High (100%) in 30-second bursts, stirring, until melted and smooth. Take care when adding brandy to the syrup; it may splatter and spit.
