Method
1.Combine sugar, juice, peel and ginger in a small saucepan. Cook and stir over moderate heat until sugar dissolves. Bring to the boil. Reduce heat to low; simmer, uncovered, for 5-7 minutes or until thickened slightly. Let cool slightly.
2.Meanwhile, using a melon baller, scoop balls of watermelon, honeydew and rockmelon into a large bowl.
3.Drizzle cooled ginger syrup over melon balls; stir to combine. Cover with plastic food wrap and chill for 1 hour or until ready to serve.
4.Spoon fruit and syrup into serving dishes; top with mint.
The syrup is also good with banana and seedless grapes.
