Method

1.Combine egg yolks and sugar in a bowl and whisk until pale. Gently fold in mascarpone.
2.Beat egg whites in a clean bowl until stiff peaks form. Add marsala and half of the grated chocolate. Whisk again until you have soft peaks. Fold gently into mascarpone mixture.
3.Place a single layer of biscuits in base of a deep serving dish. Pour over enough coffee to soak biscuits well. Spread mascarpone mixture on top. Then add another layer of biscuits, followed by coffee and mascarpone mixture, until ingredients have all been used.
4.Sprinkle with shaved chocolate, then refrigerate at least 4 hours before serving.
