Method

1.Preheat oven to moderate, 180°C. Lightly spray a 1-hole muffin pan with oil.
2.To make poached plums, combine water and sugar in a medium saucepan. Stir over low heat 3-4 minutes, without boiling, until sugar dissolves. Add orange slices and cinnamon to syrup. Bring to the boil on high. Reduce heat to low and simmer, uncovered, 20 minutes, until thickened slightly. Add plums. Simmer, covered, 3-5 minutes, until just tender.
3.In a medium bowl combine ricotta, 2 tablespoons brown sugar and vanilla. Fold through egg-white. Spoon evenly into muffin pan. Sprinkle with remaining sugar.
4.Bake 8-10 minutes, until just firm. Cool in pan for 5 minutes, then turn onto a lined wire rack to cool completely. Serve with plums, syrup, yoghurt and almond bread.
