Method

1.Stir sugar, honey and the water in small saucepan over low heat until sugar dissolves. Bring to boil. Boil about 5 minutes or until golden brown (or hard crack stage on a sugar thermometer).
2.Place a strawberry on the end of a wooden skewer and quickly dip two-thirds of the strawberry into the toffee.
3.Place strawberry on baking-paper-lined oven tray, gently remove skewer. Repeat with remaining strawberries.If toffee becomes too firm while dipping, return pan to low heat until toffee melts.

You can find lavender honey (produced by bees fed on lavender) at selected delicatessens. If unavailable, any variety of honey can be used.
