Method
1.Chop the pineapple and place into a food processor or blender. Process until smooth.
2.Pass through a sieve to remove the pulp (you should have 2 cups (500ml) of pineapple juice).
3.Place the pineapple juice, lime juice and sugar into a saucepan. Heat until the sugar has dissolved.
4.Meanwhile, soak gelatine in a bowl of cold water for about three minutes or until softened.
5.Remove the juices from the heat, stir in the gelatine, then transfer mixture to a jug. Place in the fridge to chill.
6.Once cold, pour the mixture into eight popsicle holders (each should be 2/3 full).
7.Place in the freezer until semi-frozen, then insert a wooden stick into each holder. Return to the freezer until frozen.
8.Place the milk, cream, sugar and vanilla into a saucepan and heat, stirring until the sugar has dissolved. Transfer the mixture to a jug and chill until cold.
9.Pour the milk mixture into the popsicle holders until they’re full. Freeze until frozen.
Titanium refers to the strength of gelatine. It is equal to 5g of powdered gelatine.
