1.Using a vegetable peeler, remove and discard the rind from oranges.Trim the ends from the oranges to expose the orange flesh. Cut each orange into 8 wedges; cut the white pith away from the flesh. Reserve flesh for another use. Cut strips of pith in half diagonally.
2.Place pith in medium saucepan with enough cold water to cover completely. Bring to the boil; boil, uncovered, 5 minutes. Drain, rinse pith under cold water. Repeat process two more times. Dry pith on absorbent paper for 30 minutes.
3.Stir sugar with water in small saucepan over heat until sugar dissolves. Add pith; bring to the boil. Boil, uncovered, about 10 minutes or until mixture thickens enough to coat the back of a spoon. Stir in juice. Cool to room temperature.
