Method

1.Preheat oven to moderate, 180°C. Lightly grease a 13 x 23cm loaf pan. Line base with baking paper.
2.Beat butter, sugar and vanilla together in a large bowl using an electric mixer, until creamy.
3.Add eggs, one at a time, beating well after each addition, scraping down sides of bowl.
4.Lightly fold flour into creamed mixture alternately with milk, beginning and ending with flour. Divide mixture evenly into 3.
5.Leave one portion plain, add a few drops of colouring to another portion, and cocoa, soda and extra milk to the remaining portion.
6.Drop alternate colours into prepared pan until all is used. Draw a skewer or thin-bladed knife in circles through the batter to streak the colour.
7.Smooth top and bake for 50-55 minutes, or until cooked when tested. Cool in pan for 5 minutes, before turning onto a wire rack to cool completely.
8.To make Chocolate Icing; sift icing sugar and cocoa together into a bowl. Add butter and water. Beat well until a smooth, spreadable consistency.
9.Spread over cooled cake.

Test cake is cooked by touching the top lightly with your fingertip. It will spring back if ready. Or, insert a skewer into the centre of the cake; if it comes out clean and dry, the cake is cooked.
