Grilled honey mango with mango ice-cream

This cool, light dessert is definitely one for the summer, when mangoes are cheap and plentiful. The cheat's mango ice-cream can be prepared well ahead and kept in the freezer until needed.

Method

1.In a food processor or blender, puree the flesh of very ripe mangoes until smooth. Transfer to a bowl with the ice-cream. Swirl through to combine. Transfer to a freezer container. Freeze for 2 hours or until firm.
2.SAUCE: In a small saucepan, combine berries, sugar and water. Stir over a low heat, until sugar dissolves. Simmer for 3-4 minutes, to soften berries. Process until smooth, then strain through a sieve.
3.Preheat a char-grill pan or clean barbecue plate on high. Brush mango cheeks with honey. Cook for about 1 minute, until light grill marks appear. Serve warm with scoops of ice-cream and a drizzle of sauce.

If preferred, you can use drained canned mango and puree it before adding to the ice-cream.
