Ingredients
2/3 cup (100g) plain flour
2/3 cup (100g) self-raising flour
1/2 teaspoon bicarbonate of soda
2 teaspoon ground cinnamon
2 teaspoon ground ginger
1/2 teaspoon ground cloves
1 cup (220g) firmly packed brown sugar
2/3 cup (160ml) buttermilk
2 eggs, lightly beaten
100 gram unsalted butter, melted
1 cup (160g) icing sugar
1/2 teaspoon finely grated orange rind
1 tablespoon strained orange juice
2 teaspoon hot water
Method
1. Preheat oven to 180°C (160°C fan-forced). Grease and flour 8 holes of two 6-hole mini fluted tube pans.
2. Sift flours, soda, spices and sugar into a medium bowl. Add buttermilk, egg and butter, then stir until smooth. Divide mixture among pan holes; bake about 30 minutes.
3. Turn cakes immediately onto greased wire rack placed over tray. Cool.
4. To make orange glaze, sift icing sugar into medium bowl and add rind, juice and water. Stir until smooth.
5. Pour glaze over cakes; stand until glaze is set.
