Easy to make and wonderfully sweet, this vanilla and cinnamon spiced fruit compote is beautiful served with a dollop of creamy yoghurt for an easy dessert.

Method

Dried fruit compote with yogurt

1.Place 2 cups water, cinnamon sticks and vanilla in a medium saucepan. Bring to boil on high heat. Reduce heat to low, add dried fruit and simmer, uncovered, 5 minutes, until fruit is tender and plump. Remove from heat and set aside to infuse for 30 minutes.
2.Divide fruit compote between serving bowls or glasses and top with a dollop of yoghurt, to serve.

Fruit that is left overnight will continue to absorb the syrup. You could use 1 teaspoon vanilla paste in place of the vanilla bean.
