Method
1.Preheat oven to 180°C (160°C fan-forced). Line a large baking tray with baking paper. Combine butter and honey in a small saucepan. Cook and stir over low heat 2-3 minutes, or until melted and combined. Remove from heat.
2.Place remaining ingredients in a large bowl. Stir in honey mixture until well combined. Shape 2 heaped tablespoons of mixture into balls and place on prepared tray. Flatten slightly.
3.Bake 12-15 minutes, or until golden brown. Remove from oven. Cool cookies on tray (cookies will firm).
The mixture should be a little sticky before baking.
