Method

1.Combine icing sugar, lime juice and zest in a bowl.
2.Place cream in the bowl of an electric beater; beat until soft peeks form. Fold through lime juice mixture and coconut cream.
3.Pour mixture into a freezer-proof container. Freeze for several hours. Remove and use a fork to stir the mixture and break up the ice crystals. Freeze until firm. To serve, scoop into cones or cups.

If you have an ice-cream maker, you can churn the ice-cream in this following the manufacturer’s instructions.
