Chocolate marshmallow brownies

Marshmallows add a gooey note to this brownie. Have a slice for afternoon tea or serve with ice cream for a decadent dessert.

Method

1.Preheat the oven to 180°C. Line a 27cm x 18cm slice tin with baking paper.
2.Combine the chocolate, butter, sugar and vanilla in a microwave or heat-proof bowl and heat until melted and smooth. Cool for at least 15 minutes.
3.Whisk in the eggs, one at a time, then fold in the flour and three-quarters of the marshmallows.
4.Pour into lined tin, sprinkle with remaining marshmallows and bake for 20-25 minutes (test with a skewer – the brownie is done when the top is firm but the centre is still slightly damp).
5.Dust with icing sugar and serve with cream or ice cream.

This is an ideal, super-quick recipe to make with kids, with lots of bowl-licking and opportunities to sneakily pinch ingredients.
