Method
1.Preheat oven to 200°C/180°C fan-forced. Grease and line base of a 20cm square, deep cake pan.
2.Place chocolate and butter in a large bowl over a pan of simmering water. Stir until chocolate melts and mixture is smooth. Remove from heat. Stir in egg, sugar and vanilla. Fold through flour.
3.Pour into prepared pan and bake for 20-25 minutes, or until sides shrink slightly from pan. Cool in pan and cut into squares to serve.
Make a double batch and freeze individual portions in plastic wrap. Add them as a treat to the kids lunch boxes – by the time the lunch bell rings, they’ll have thawed. Or take them out in the morning and leave them to thaw on the kitchen bench. They’ll be ready after school for a sweet snack.
