Savoury pancakes

Enjoy a lazy Sunday brunch or light, kid-friendly lunch with these flavoursome teriyaki pork and cabbage pancakes - lifted with bok choy, ginger and oyster sauce.

Ingredients

Method

1.In a bowl, sift together flour and baking powder. Make a well in centre of ingredients.
2.Gradually add stock and egg, mixing quickly, until smooth. Stand for 15 minutes.
3.Stir pork and cabbage mixture into batter. Heat a non-stick frying pan on medium. Brush with oil. Spoon in 1/4 of mixture.
4.Cook for 2-3 minutes, until bubbles appear. Turn, brush with soy and continue cooking for 1-2 minutes. Turn and brush first side with soy.
5.Transfer to a plate. Cover and keep warm. Continue with remaining oil, batter and soy. Serve pancakes with steamed bok choy, pickled ginger and oyster sauce.

This is a great dish for vegie-shy children – the cabbage is hidden.
