1.Preheat oven to 180°C. Line a baking tray with baking paper. Place roma tomatoes, cut side up, on tray. Season to taste. Bake for 20 minutes.
2.Warm tortillas according to packet directions. In a bowl, whisk eggs, milk, chives and parsley. Season to taste. Melt butter in a small saucepan on low heat. Add egg mixture. Heat gently, stirring, for 3-5 minutes, until egg becomes just firm. Remove from heat. Divide mixture and tomatoes among tortillas. Roll up and serve.
