Method

1.Combine apricots, water and cardamom in a bowl. Cover with plastic wrap and soak overnight.
2.Drain apricots, reserving liquid. Thinly slice apricots. Place in a heavy-based saucepan with reserved liquid. Heat on medium until simmering. Reduce heat to low and simmer 15-20 minutes, until fruit softens. Remove cardamom pods.
3.Meanwhile, preheat oven to moderate, 180°C. Line an oven tray with baking paper. Spread sugar over tray. Bake for 4-5 minutes, until heated through.
4.Add sugar and lemon juice to saucepan. Stir on low heat until sugar dissolves. Increase heat to high and bring to boil. Continue boiling for 20-25 minutes, until setting point is reached. Cool for 5 minutes. Pour into warm sterilised jars and seal.
