Creamy scrambled eggs on brioche with crispy bacon

Give your usual full English a little bit of French inspiration with this creamy scrambled eggs on brioche version. Remove your eggs from the heat when they are still slightly undercooked and let them finish off in the pan for a perfect result.

1.Preheat grill.
2.Toss tomatoes in oil. Cook bacon and tomato under grill until bacon is crisp and tomato skins start to split. Cover to keep warm.
3.Meanwhile, place eggs, cream and chives in medium bowl; beat lightly with fork.
4.Heat butter in large non-stick frying pan over medium heat. Add egg mixture, wait a few seconds, then use a wide spatula to gently scrape the set egg mixture along the base of the pan; cook until creamy and just set.
5.Serve brioche topped with egg, bacon and tomatoes.
