1.Preheat waffle maker on medium. Spray plates with oil.
2.Sift flour into a large bowl. Stir in sugar. In a jug, whisk together milk, butter, egg-yolks and vanilla.
3.Gradually whisk milk mixture into flour mixture, until smooth.
4.In a clean bowl, beat egg-whites until stiff peaks form. Lightly fold through batter with half the blueberries. Pour into a large jug.
5.Pour batter into waffle maker. Close and cook for 4-5 minutes, following the manufacturer’s instructions. Serve with ice-cream, remaining berries and chocolate sauce.
If you don’t have a waffle maker, cook batter as for a pancake in a heavy-based frying pan or on a barbecue plate. To make chocolate sauce, bring 1/2 cup cream to the boil in a small saucepan. Stir in 90g chopped dark chocolate, until melted
