Apricot Muesli Slice

Method

1.Preheat oven to 180°C (160°C fan-forced). Lightly grease and line a 26 x 16cm slice pan. Using an electric mixer, beat butter and sugar in large bowl until pale and creamy. Add eggs, one by one, beating until smooth.
2.Fold in sifted flour, coconut and milk until just combined. Spread mixture into prepared pan. Arrange apricot halves over top and sprinkle with muesli.
3.Bake for 25-30 minutes or until a skewer inserted at centre comes out clean. Cool in pan. Cut into pieces; serve topped with cream.

Tip: Replace apricots with peach slices or plums.
