Mushroom cheese puffs

What could be better than the Holy Trinity of savoury food: butter, garlic and cheese? Add in some mushroom and you'll find that just one is simply not enough.

Method

1.Preheat the oven to moderately hot, 200°C (180°C fan-forced). Line 2 large baking trays with baking paper.
2.Melt butter in a medium flying pan; add mushrooms, cook, stirring, until browned and soft. Add garlic, cook, stirring, until fragrant. Drain on absorbent paper.
3.Combine extra butter and water in a medium saucepan. Bring to the boil and remove from heat. Add flour all at once, stir with a wooden spoon until combined; return pan to heat. Stir over medium heat until mixture starts to leave sides of pan, about 3 minutes.
4.Transfer the mixture to the small bowl of an electric mixer. Add eggs, one at a time, beating well between additions.
5.Stir in gruyere cheese, mushrooms and salt and pepper to taste.
6.Drop heaped teaspoons of mixture onto prepared oven trays. Sprinkle the mixture with parmesan cheese and bake in a moderately hot oven for 10 minutes. Reduce the temperature to moderate, 180°C (160°C fan-forced), bake for a further 10 minutes or until puffed, browned and cooked through. Serve immediately.
