No need to bother the baker about whipping up these patty cakes, this recipe is so simple you can do it yourself. These soft, buttery treats are perfect for an afternoon snack with tea or coffee.

Method

1.Preheat oven to 180%deg;C or 160%deg;C fan-forced. Line two 12-hole patty pan trays with paper patty cases.
2.Place flour, sugar, butter, egg and milk in a large bowl. Using an electric mixer, beat on medium speed 3 minutes, until mixture is smooth and pale. Stir through currants.
3.Spoon heaped tablespoons of mixture into prepared pans. Bake 15 minutes, until golden and firm to touch. Cool in pans. Dust with icing sugar before serving.
