Peanut butter slice
- 250 gram packet chocolate ripple biscuits
- 100 gram butter, melted
- 500 gram jar peanut butter
- 1 1/2 cup sifted icing sugar
- 1/4 cup crushed peanuts
Method
Peanut butter slice
- 1Lightly grease and line a 20cm X 30cm slice pan with baking paper, allowing it to overhang on long sides.
- 2Using a food processor, crush biscuits to fine crumbs. Add butter, processing until well combined. Spoon mixture into pan, pressing firmly over base with a fork. Chill 30 minutes.
- 3In a large bowl, using an electric mixer, beat peanut butter and icing sugar together until smooth. Spread evenly over biscuit base, smoothing surface. Sprinkle with nuts. Chill 2 hours or until set. Cut slice to serve.
