Nine birthday candles
- 1 x 340g packet butter cake mix
- 1/3 cup (110g) apricot jam, warmed, strained
- 1/2 cup (80g) icing (confectioners') sugar
- 250 gram ready-made white icing
- pink and mauve food colouring
- 5 packets purple scrapbooking flowers
- 2 packets pink scrapbooking flowers
- 11 tea-light candles
Method
Nine birthday candles
- 1Preheat oven to 180°C (160°C fan forced). Line muffin pan with the paper cases.
- 2Make cake according to directions on packet, drop 2½ level tablespoons of the mixture into each paper case. Bake about 20 minutes. Stand cakes in pan 5 minutes before turning top-side up, onto a wire rack to cool.
- 3Lightly brush jam on cake tops. Knead ready-made icing on a surface dusted with sifted icing sugar until smooth, divide into three equal portions. Tint one portion pink and one portion mauve, leave the remaining portion white. Roll out each colour, one at a time, until 3mm (⅛-inch) thick.
- 4Using the 7cm (2¾-inch) cutter, cut three rounds from the pink icing, four rounds from the mauve icing and four rounds from the white icing, position on cakes. Using the 3.5cm (1½-inch) cutter, cut out the centre of each icing round, discard centre cut-outs.
- 5Attach scrap booking flowers around the side of each candle, position candle in the centre of each cake.
- 6Using picture as a guide, position cakes on cake board to form the number 9, secure with a little butter cream.

Use any themed scrapbooking stickers you like.
