Ingredients

Method

1.Combine oil, sliced garlic and oregano in a bowl. Season. Add steaks and turn to coat. Cover with plastic wrap. Refrigerate for at least 1 hour.
2.Heat a chargrill on high. Remove steaks from marinade and cook for 2 minutes, until browned. Turn, baste with any remaining marinade, and cook for another 1-2 minutes for medium-rare, or until cooked to your liking. Transfer to a plate, cover loosely with foil and set aside.
3.Heat extra oil in a large frying pan on high. Add chopped garlic and spinach and cook, stirring, for 2 minutes, until spinach wilts. Season to taste.
4.Place steaks and spinach on plates. Serve with crusty bread and lemon wedges.

It’s important to remove the beef from the fridge about 30 minutes before you plan to cook it, and let it stand at room temperature for this time. This will reduce the chill in the meat, and allow it to cook more evenly.
