Ingredients

Method

1.Heat a frying pan on high. Brush pork with oil and season to taste. Fry for 10-12 minutes, turning, until golden on all sides.
2.Reduce heat to medium and continue to cook for 4-8 minutes (depending on thickness), until cooked through. Remove to a plate and rest, covered, for 10 minutes.
3.Meanwhile, heat extra oil in large saucepan on medium. Saute onion for 3-4 minutes, until softened. Add capsicum and pepper. and cook, stirring, for 1 minute, until fragrant. Pour in stock and tomatoes. Simmer, uncovered, for 10-12 minutes.
4.Heat oil in heavy-based saucepan on high. Deep-fry tortilla strips in 4 batches for 30 seconds, until golden and crisp. Drain on paper towel.
5.Use two forks or your fingers to shred pork meat. Stir pork and lime juice through soup. Season to taste. Serve topped with tortilla crisps, cheese and coriander.

Chipotle peppers have a distinct, smoky flavour and can be found in specialty food stores. Otherwise, you can use 1 tablespoon of chopped jalapeno chilli or 2 chopped birdseye chillies.
