Method
1.Heat a large frying pan over moderate heat. Spray meatballs with oil. Add to pan cook and stir for 2 minutes or until served. Remove from heat.
2.Combine pumpkin soup, 1 cup water and coconut milk in a medium saucepan over low heat. Add meatballs simmer, uncovered, for 10 minutes or until meatballs are cooked.
3.Rinse noodles under hot water to separate strands. Add vegetables and noodles to soup; simmer, uncovered, for 2-3 minutes or until vegetables are tender. Add juice end coriander; stir. Ladle soup into serving bowls. Serve.
Use any combination of vegetables. Find chicken meatballs in the fresh poultry section in supermarkets.
