Minestrone sausage soup

Ingredients

Method

1.Heat oil in a large frying pan over moderately high heat. Cook and turn sausages 7-10 minutes, or until cooked. Transfer to a chopping board. Cool slightly. Slice.
2.Add onion, carrot, celery and garlic to pan. Cook, stirring, 5 minutes or until onion softens. Add tomato and stock. Bring to the boil. Add pasta and cauliflower. Boil 10 minutes, or until pasta is tender but firm to the bite.
3.Add beans and sausage to soup. Simmer 3 minutes, or until beans are tender. Ladle hot soup into bowls. Serve with toast.

For vegetarians: use vegetarian sausages and stock.
