Method

1.Preheat oven to 200°C.
2.Remove crusts from bread and process until finely chopped. Saute bacon in a frying pan on high for 3 minutes. Add onion, marmalade, pistachios and thyme. Cook for 3 minutes.
3.Stir through breadcrumbs. Season to taste. Trim, wash and dry duck (or chicken). Spoon stuffing into cavity.
4.Place in a baking pan, prick skin with a skewer and rub with a little salt. Bake for 1 hour, until juices run clear when tested. Serve.
